Eating ice cream too fast can trigger a short brain freeze headache.
An ice cream truck is really a tiny shop on wheels, and the most important thing it carries is cold. Its freezers have to hold ice cream well below freezing for hours, even on a sweltering afternoon.
Ice cream is made by chilling a mix of milk, cream, sugar and flavors while stirring it constantly. Churning creates tiny ice crystals and whips in air, which keeps it light and creamy. Freeze the same mix without stirring and you get a hard block full of big crystals.
Some trucks also carry a soft serve machine, the kind that swirls ice cream straight onto a cone. It freezes the mix on the spot, so soft serve is a bit warmer and softer than the scoops served from a tub.
To keep everything running, many trucks use cold plates, generators or batteries that power the freezers with the engine off. And because it is food, sellers follow health rules much like a restaurant kitchen: wash hands, store every product at the right temperature and clean the machines every day. In many cities, ice cream trucks need a special permit, and inspectors check them just as they would check a restaurant.
